what knives do you use?

i love my 10" classic wusthof chefs knife.

i also got a global set, but someone stole the 8" chefs knife (or i lost it).
so i have no use for the other knives.

Don't be fooled by the rustiness of the grind on the old one, the blade is way sharp.

SO what knives do you all use?

I've got a global set, (though no 8" chefs knife.. went missing),
and a Wusthof 10" classic chefs knife.

The global set (6 peice) was about $350,
and the wusthof was $299

I've yet to sharpen them myself though..
don't want to stuff the blade up.

But for cheaper knives (<$50), I'll use a steel and a diamond stone.

Zwilling J.A. Henckels, all the way. Usually sharpen with a ceramic rod, in the few cases they need it.

My goal set is a set of Shun blades.

I had a Henckles, but i lost it somewhere...
was only a lower range model though.

Which series shun?

I think they're overrated =]..
but then again, i think wusthof is as well.

I love global in terms of price vs performance.

Don't really care - I just have a bit of a hard-on for damascene/wootz steel :p It's either the Shuns or some of the Scanpan ones.

Oh I would, the Scanpan ones are crappy (in fact, most everything by Scanpan is crappy, except for their plain stainless steel cookware). I like the look of Globals.
go with global!.

sharp as hell, and light as well.

can't go wrong with their 8" chefs knife

Nah, I like a bit of weight, hence the Zwillings. I LOVE Zwilling. Best straight steel knives on the planet, IMHO.

Meh, I think Wusthof's are overrated, and I don't have any experience with Sabatiers.

Yes they are overrated,
but the higher-end models are pretty good.

though for the money i'd rather get several globals.
or those higher-end globals.. i forget the name

Bowie and survival knives against people.
Kitchen knife for general purpose and vegetables, anything with smaller cross section of radius, say less than 8 cm.
Cleavers for yes, crushing garlic and cutting large chunks of meat
