It's rare to find someone else with a working mic on the PS3 version of BF3. usually there's no-chatter when I jump online for a quick game after work.
You're best off finding PS3 players here, adding their PSN id so you can play it as it was intended - with teamwork.
Not sure what the current format is for custom titles, though it may be related to rep like SpiralFlex said.
Back when it was first introduced (2004-5?) you could customise it once your rep hit a certain mark, and people exchanged rep points for good posts.

The forum there is great for looking for volunteer work.
No professional film crews will take a beginner, but the more lower-tier filmmakers don't mind. Just expect to be thrown into the usual rookie roles of Boom Operator or just carrying equipment around.
NIDA has some good crash courses in acting. So should your local community college, TAFE, art school.
Or find a friend who likes to make short movies and act in them, many many times.
