Anyone care to share how this works?

I really want to do Engineering, but I want to know if the electives can fall under Science?

It depends on your course

Straight engineering: http://www.monash.edu.au/pubs/handbooks/courses/0032.html
so you have barely any electives, and when you do you don't have much of a choice in it
