Heres a question i not sure what to answer:

Explain how mass changes can be used to monitor the fermentation reaction. Include a suitable equation in your answer.

Well, if you look at the mass change - it's due to CO2 lost.

If the rate of CO2 loss is high (steeper gradient), then the reaction is occurring quickly. If the rate of CO2 loss is low (lower gradient), then the reaction is occurring slowly. If the gradient is 0, then the reaction is complete.

Also, don't forget to refer to the equation: C6H12O6-->2C2H5OH+2CO2
