here are some notes on the environmental issues/ social issues and the food manufacturing industry.
they are only basic kind of notes that i recieved in class, but i thought that they may be of help to some of you out there.
drop me a line n lemme know if they r helpful or just leave a comment.
oh and in the next few weeks i will be putting up my notes on the rest of the year 12 foodtech subjects n stuff n for other subjects aswell so gimme a holler

here are my notes on the australian food industry.
they have been written according to the syllabus.

the section of the syllabus these notes r under r the australian food industry.
but the "chapter or woteva is sectors of the food industry
sorry if i may have caused confusion incase u were wondering were the rest of d notes on the afi were.

  1. advisory groups
  2. australian food standards code
  3. the australian food regulation partnership
  4. codes of practice
  5. product recall
  6. australian quarantine & inspection service
  7. government policies and the food industry
  8. legislation affecting the food industry

Could someone please post up a sensory test on a food product please ?
Preferably not bread and muffins.

We did one on Icecreams, but I don't have any notes. It's pretty basic though.

Australian Food Industry
Sectors of AFI :
· Agriculture and Fisheries
· Food Processing and Manufacture
· Food Retail
· Food Service and Catering

Agri-Food Chain
The Agri-Food Chain refers to the production and supply of food for the consumer.

AGRICULTURE AND FISHERIES
Definitions
Agriculture : Is the production of crops and / or animals.
Fisheries : Is the farming of various cold-blooded, aquatic species for a commercial or scientific purpose.
Trends in this sector include:
· Use of technology to overcome harsh conditions
· Contribution to export markets of primary industries
· Large-scale production
· Increasing aqua-culture

FOOD PROCESSING & MANUFACTURING
Food Processing
A series of actions that change food from its natural state to a different form
Trends in this sector include:
· Value added products – (process of other goods into another to increase market share and price) are a large part of the Australian Food Market
· % of manufactured food products has increased in Australian food
· Many food processing companies are multinational organisations
· The industry id diverse ranging from household production to large-scale production

FOOD RETAIL
The selling of food at all levels

Trends in this sector include:
  • Larger supermarkets over smaller convenience stores
  • Speciality chain stores as a part of larger shopping centres
  • Changing working hours- 24 hour opening hours and internet ordering
  • Increase consumption of convenience food eg reheat dinners
  • Increase health awareness leading to fresh food chains
FOOD SERVICE AND CATERING
This sector involves all part of commercial food production and service.

Trends in this sector include:
  • One in four meals are eaten away from home because of busy lifestyles
  • Organisations exist to provide commercial (restaurants) and non commercial meals (hospitals)
  • Growth in multinational retail chains eg KFC, McDonalds
  • Home delivery services are increasing
