basically a gantt chart is a bit like a bar graph where you have the tasks you have to complete on one side and down the bottom the time frame you expect it to take. So for your major project, you might have understanding the problem which you allow 3 days for, then designing solutions which might take a week, implementing your solution which could take two weeks then evaluating which might take one week - obviously you'd have more stages than that though. you can make the scheduled time for these tasks overlap though.

Look up gantt chart in the index of your textbook for a better explanation, i cant be bothered to go get my heinemann from last year to get the page number. and here is a gantt chart i did last year in a textbook exercise to give you an idea of what it looks like. hope this helps you :)

You use Gantt Chart for scheduling so it applies to all parts of the system development cycle from start to finish. You can make one say, for the different stages (eg. 3 days for understanding the problem, 3 days for making decisions, may overlap with designing solutions, etc..), and then go into more specific detail and create more Gantt charts within these stages. The point is however that different tasks can overlap and the Gantt chart allows you to show this.
