Past HSC papers are definitely the way to go. Find them on the board of studies website. Maxima and minima problems are usually in the latter part of the paper i.e. questions 8-10.

What textbook are you using?, cant be that bad can it?

I use a combo of Excel HSC mathematics (lyn baker) and New senior Mathematics (J.b Fitzpatrick) and i find them great.

Hey HSC online is really good for any subject, but for maths they have a few helpful slideshows that take you step-by-step in a problem, i think this is the link you are looking for: http://hsc.csu.edu.au/maths/mathematics/application_calculus/
