i know this is for food tech people but i was wondering if anyone could help me find a recipe for hospitality, i have to cook it and it has to be a breakfast meal with the following criteria:
  • must have eggs (could be used in say a cake, doens't have to be like poached or whatever)
  • one foodstuff is to be precision cut
  • must use a sauce (sweet or savoury)
  • 3 different cookery methods must be included
  • the meal should be approprately garnished or served with an accompaniment
  • food should be plated to industry standard
so if anypone could help me by giving me a recipe for a breakfats meal that they will allow me to use, so that i can have this thing over and done with that would much appreciated!! :)

Try doing poached eggs, and asparagus with a hollandaise sauce garnished with small pieces of diced bacon and melba toast.

This has a moist with poaching of the egg and blanching of the asparagus.
Sauce; hollandaise (moist heat but can also be classed as dry heat as the sauce does not necessarily touch water if done using a double boiler system)
Garnish with the bacon doing a DICE not macedoine, and an accompaniment of melba toast both using a dry heat method.

This can be plated very nicely.
