tl;dr from the top of my head:

1. Enzymes work best under optimum conditions like temp and pH. If they are any variations it'll reduce their rate of activity. Large variations will denature the enzyme (it'll be permanently damaged and won't be able to catalyse reactions). As you learnt in your first dot point, you should know why enzymes are important so we need to maintain a constant internal environment.

2. Each haeomoglobin molecule contains 4 actives sites where oxygen molecules can be attached and each rbc contains 280-300 million haemoglobin. So the advantage here is pretty clear, it allows mammals to transport more oxygen to the tissues.
