I know Einstein was able to explain the photoelectric effect and that Planck was able to derive an accurate equation for black body radiation curves due to his assumption of energy quantisation, but what more did Einstein do to explain black body radiation?

Taken from the dot point: Identify Einstein's contribution to quantum theory and its relation to black body radiation.

Thank you!

He did NOTHING to explain BBR.

He drew from Plancks idea of quantisation, which was used to explain BBR curve. He APPLIED Plancks idea to the radiant energy field itself, rather than the energy levels in a black body.
He contributed nothing to BBR, but used the hypothesis of quantisation to explain photoelectric effect, thus supporting Plancks hypothesis.
You must make sure that before ou even start talking about Einstein, you mention Planck and his hypothesis and then how Einstein extended his hypothesis to the radiant energy field, thus explaining PE Effect and giving support to his hypothesis.
Keep in mind that quantisation was not supported initially, as it was a huge change in the direction of scientific thinking and all of the physicists of the time were Autistic and did not like change. Einstein explanation of PE Effect provided further evidence for quantisation -- that is how it relates to BBR
