If I don't know the states of matter for a question should I write them or not (ie. do you lose marks for incorrect states if the marking for that question doesn't actually require states?)

yes, sometimes only if to demonstrate something, a certain state is needed.

You will lose marks if the states are not specified on the marking criteria and you include incorrect information.
