I'm having trouble finding a good technique in this quote from As You Like It
"He calls us back: my pride fell with my fortunes; I’ll ask him what he would. Did you call, sir? Sir, you have wrestled well, and overthrown more than your enemies."
I want to highlight Rosalind's initial infatuation, thank you

I think you can choose a better quote to highlight her infatuation - I would look at when she talks to Celia in the beginning scenes and overtly suggests having Orlando's children, which was very outspoken of a woman to profess such "love" (to put simply) of a Shakespearean time. You can look at talking about love imagery, overtly suggestive tone (which highlights her infatuation, etc.) or unstereotypical language, which transcends the rigid speech constructs of the Elizabethan era (thus permitting Rosalind to express her initial infatuations, etc.).
