If I was to re-apply for UAC offers at the end of this year as a "non-yr 12 applicant", what would be my selection criteria? Would I still be able to use my 2005 UAI?

2005 uai / 1 year full-time tertiary study.
Usually 50/50 but it depends on course/insitution.

You copied that from the med website. It doesn't really work though, cos the entrance rank is a nrsl not a uai.
