basically haccp is a food safety system that is implemented in all food related areas. it involves the identification of potentially harmful hazards in the food chain (ie, the process of preparing and making the meal), and putting steps in place to prevent the hazards from happening.
this can be done by analising the hazards, identifying the critical points and controlling these points to insure the food is safe for consumption.
all the examples that i have seen for haccp revolve around chicken so it would be safe to use it as an example if needed in the exam.
