Factorise the numerator as the difference of two squares and factorise the denominator by taking out cos(theta). A factor of cos theta + sin theta will divide out and the result should be obvious.

$\frac {cos^2\theta - sin^2 \theta}{cos^2 \theta + cos\theta sin\theta} = \frac {(cos \theta+sin\theta)(cos\theta - sin\theta)}{cos\theta (cos \theta + sin \theta)} \\ \\ = \frac {cos\theta}{cos\theta} - \frac {sin\theta}{cos\theta} = 1 - tan\theta$
