Hello, I was wondering what is the main differences between Civil Engineering/Civil Engineering (Construction)/Civil Engineering (Structures) at UTS? Will it affect me greatly in the future for job prospects?

The definition is pretty straightforward,

Construction is mainly about construction and construction management.

Structural is about designing structures of bridges, high-rises etc.
