If your struggling to choose, look through what majors & sub-majors they offer.
For example, at UWS you can do a General Biology, Geochemistry, Microbiology or Biochemistry and Molecular Biology major.
Where, with the Applied Chemistry degree at UTS, Applied Chemistry IS your major.
If you wanted to be a microbiologist, the degree may not be as specified as that option at UWS.
That being said, UTS has a lot more sub majors to UWS. Again, with the microbiology example, UWS has a sub major of Immunology and Cell Biology where UTS does not appear to have.

The two UWS campus's have different majors and sub majors. So if you've got your heart set on Zoology, you'll need to check the Campbelltown option
Regardless of which you choose however, you're degree is recognised by The Royal Australian Chemical Institute (RACI). I also believe UTS and UWS have rather new science facilities. And depending on where you live, one may be more convenient to get to than another.
