have a read of Table 1: Egg Yolks Versus Egg Whites.
Basically almost all the fat in eggs are in the yolk, but the yolk also has tons of vitamins and minerals, so you may as well eat the entire egg.
But if you get your intake of those vitamins via other foods then it's okay to rid the yolk simply to cut your fat intake.
