If I showed my principal the below image from the NESA guidelines and made my case, do you think I may be able to change subjects?
The recommended cut off date wasn't even that long ago (end of last month) and it says "Normally", and does not explicitly say no changes can be made now?

It’s up to the discretion of the principal. It depends on what they think, and your circumstances. What subjects are you planning on switching? They may be quite happy to let you go from 2U math to General or Bio to Investigating Science but probably won’t let you go from Chemistry to Legal studies at this point in the year.

They may be quite happy to let you go from 2U math to General or Bio to Investigating Science but probably won’t let you go from Chemistry to Legal studies at this point in the year.
Yeah unfortunately the switch wouldn't be between two similar fields of subjects. I thought as the subject I am wanting to move into is humanity subject though, I could show the grades of my other humanity/essay subjects which range from mid to high As and that may convince my principal that I can "satisfactorily complete the new course"?

I might be wrong, but as I understand it, to "satisfactorily complete the new course", you need to complete all assessments. How would you complete the assessments completed in terms 1 and 2? You would have to come up to speed on a lot of prelim content, very quickly. Doesn't sound recommended to me. My school has said they don't allow any switches under any but the most extenuating circumstances after week 3 term 1!

Do you have a specific reason for wanting to switch this late?

I’m not too worried about catching up on any assignments and course work as I have no assignments this term until week 9 and 10 prelim tests and so would have excess time to do so. My school said that too about the latest date to switch but since then a lot of people have switched haha. It definitely depends on your ability to convince them.
My main reason for switching this late is that the other subject I want to do has more relevance to my future aspirations. I also reckon I will be able to achieve higher marks in this subject and will overall be more interested in content. I may have to think of a more compelling reason though.

Can you tell us the actual subjects? It's relatively easy to jump into a humanities subject like society and culture but maybe a bit harder for like economics

Hmm yeah unlikely. If you want to be a lawyer/study law, legal studies isn't a requirement so you defs don't *need* to be put into legal. You can still kindly ask the school admin to see what they can do, but yeah you're not entitled to a switch.

I think it’s too late to pick up MX1 since they’ve pretty much covered the whole yr 11 content by now.
