14 units is ideal for Year 11 to find out what you really like/don't like. Maybe you might have a subject that you didn't actually like and should be able to drop it at anytime.

That isn't true - Physics, Chemistry and Economics are among the best scalers, given you do well at them of course.

Yes. The best 2 units of English will be counted to your ATAR, regardless of what subjects you choose.

Scaling-wise, Chemistry edges out Physics marginally. + Physics is the more mathematical science, but the the Maths shouldn't be of large concern.

If your teacher recommended you for MX1, then go for it. If you can't handle it next year, drop it then. In terms of the differences, there are more topics in Ext.1 that are more difficult. But of course, the MX1 course scales very well.
