if you're interpretation is that he is/isn't mad then yes write it. but you have to be able to substaniate with textual evidence so don't just randomly chuck it in there "hey hamlet's not actually crazy".

if they ask for an article just turn the plot of your story into a feature article.. don't think it'll be that bad. they'll probably ask for either: a story, a speech, a memoir or journal entries

do the minimum they tell you. you won't get extra marks for doing 3 if they said "at least 2". if anything you waste valuable time discussing an unnecessary third text which you could be using to improve the other sections of your essay.

heyy that sounds like a really good story line. shows belonging heaps :o is it written in past/present tense? first/second/third person? maybe change one of them if it's bugging you.. but plotwise i reckon it'd be good :)
