nope, that's entirely your choice, it's their assignments/assessments/tasks which make it more "practical" and real life like. It does however suck because that just means it's more group work and you get stuck with total random idiots most of the time.

Yeah, for most stuff, but it doesn't matter to employers that much, they'll hire UTS students (most anyway) for Business/IT :) because they're more aimed at management skills.
