Quick q, are u (op) aiming for post grad med? If so, I would choose the B/science degree and aim for post-grad med at USYD. That's just my personal opinion and I'm a bit swayed by uni prestige. Ultimately its up to u.
Yes u can be enrolled in 2 degrees. U can even do 2 degrees at the same time i.e one at unsw and another at usyd. Js make sure u decide and unenroll by the census date of each uni otherwise you'll be paying for the course and HECS will start counting (if u apply for hecs).
Textbook questions first, then hit the past papers. Babysteps. Theres no point doing past papers if u barely know the content. Js don't hang around textbook questions for too long since past papers are more important/effective study, but they are good starters/warmups.

Thats a pre good plan. B/Science is broad but u can explore many things. U can always choose to do a master in something for post grad. Js keep in mind that in terms of jobs, a B/Science degree alone can't get u much, so youll have to go for honours or a phd should u choose to do B/Science alone.

To add, you cant 'fail' in the HSC exam - you can't get a mark below 50 or something as NESA will then realign it based on the bell curve. e.g. if you get dead last, you'll be at the lower end of that bell curve.
