With some universities allowing an extra 5.00 points towards courses what happens to those who get a UAI above 95.05 does that mean they allow them a 100 UAI ? or 105 UAI ?

i'm not sure, but i think at the particular unis the person's uai is 105 for that uni.

they can;t consider it only if you don't get in, as that would mean kicking people who had previously got in out. they have to consider it from the start

It means you can get into courses that have a uai of up to 5 points higher than your uai, so you dont actually get 105 but you can get into any course you want

i suppose whether it's counted as 105 of 100 it doesn't matter as you should get in anyway.
