Which uni are you looking at? At any rate I'm sure the dropping part is possible at any uni. As for the first part, I doubt it. Advanced Science results in the award of a BSc with honours, so ultimately if you pick your electives right and take honours in your science major theres not gonna be a difference.

At UNSW, they do not offer B Eng/B Sci (Adv). Actually, I don't think any Sydney university does. However at the end of the B Eng\B Sci you may take an additional honours year for either Eng or Sci. From what I can tell the Sci (Adv) is very similar to the normal Sci degree, except they require you to enrol into higher and more advanced courses, which you may be allowed to enrol into in a normal Sci degree anyway.

You can do that degree at USyd (even though it isn't listed) and be awarded BE and BSc (Adv). There should be no issue with dropping a component.

As for OP, you seem more interested in the science side of the degree do BSci(adv) because your gonna do postgrad anways
My bad, if you have high enough marks you may qualify for B Eng (Hon) on your testamur. According to the UNSW Handbook:
"Honours
(a) BE with Honours
On completion of the requirements for the combined degrees a student may qualify for the award of the BE degree with Honours in accordance with the rules for the BE program of specialisation and the Faculty of Engineering rules for calculation of the grade of Honours (Honours Class 1: a weighted average of 75% or greater; Honours Class 2 Division i: a weighted average of 70% or greater; Honours Class 2 Division ii: a weighted average of 65% or greater, and a student being awarded the highest grade of Honours for which they qualify).

(b) BSc with Honours
On completion of requirements for both components of the combined degree a student may be qualified to enrol in an Honours program in the Bachelor of Science and to qualify for the award of the BSc with Honours after successfully completing an additional year of study (48 UoC) as specified in the rules of the Faculty of Science."

And just for the record I'm a B Eng/B Sci student, Musk.
