It depends on your own personal case and willingness to take on the studies. Some of these majors may be hard for you, some may be enjoyable but will require a lot of effort and some you may find easy. You don't need to decide on a major right then and there, the course structure (from what I am seeing) seems quite flexible so why don't you choose some electives that interest you and go from there?: http://sydney.edu.au/arts/future_students/courses/undergraduate/arts.shtml

Never was an Arts student but I have done some art electives and I can tell you that I still had to put in the same amount of effort I did with my sciences - they weren't difficult but that didn't mean they were easy either. All the best ~

Ease isn't the most important factor you should be considering when choosing units. What major are you looking at doing?

??

Wouldn't you just choose something relevant to what you're majority in / intend to do as your career?

Usually the thing you are most interested in, is the easiest.

Definitely Sociology, well for first-year units anyways. The content was easy, the assessments were easy (the lecturer would walk you through it step-by-step, he's a cool guy), and the exam was entirely multiple-choice. However, only choose it if it interests you or perhaps complements your intended major (that's a bonus).
