For the milk I talked about how commercial distribution of milk began to increase in the 1900's as shown by the sharp increase of the milk-related outbreaks but commercial usage of pasteurisation only began in the 1950's, demonstrated by the very quick decrease of raw milk related disease outbreaks from 1950-1975 when there were <5 every year related to raw milk consumption (after talking about good old pasteurs discovery that boiling liquids kills microbial colonies of course)
