I have subject selection very soon and i'm still deciding on which subjects I am to take. I don't know whether I should be going for the Engineering,medical or business field for my career path.

Apart from business studies and economics I don't really have a love for a subject except for physics which I believe is a subject I would be curious about. So far my subjects are:

Maths X1
Business
Eco
Physics
PDHPE
Eng Adv
(or possibly substituting one and going for bio instead).

I've heard the engineering field will have no jobs and I intend on getting the best ATAR I can as any other devoted student would want.

Engineering field varies in terms of jobs. Here are previous discussions on some questions relating to jobs:

Just choose what you may like. If you like Business Studies and Economics then do them. Maths will be helpful in any of those paths. If you want to go into medical then PDHPE and Biology will help. Physics will be most related to engineering (prelim only unless you do elec where HSC is helpful).

What about medicine? I'm trying to leave the business field as a backup in case I don't make it into Engineering or Medicine.

Do you actually like the idea of doing medicine? Medicine is one of the most demanding uni courses and the jobs involved with medicine are fairly demanding as well. Don't do medicine unless you have a genuine interest in the field.

I do have an interest in the field but not a passion, the same goes for every field. That's why I feel lost..

To decide on what field is best for you I suggest that you see how well you perform next year

For Example, if you go to a high ranked school (i.e. < 100) and the ranks for your subjects are really good (i.e. < 15 depending on how many people do that subject) then you could consider a job such as Medicine because you will be capable of getting a good ATAR and possibly do well in UMAT as well

Either way just go with that you think is right and try not to regret your decisions in the prelim and HSC year

It depends largely on the field of engineering. That being said, the reality is that it is hard to get a job in any field - you need to really work on your professional development during uni if you want to be competitive. As for your subjects, you are doing a high enough level of maths which is really all you need for those degrees you have mentioned.
