Majorcan Chicken
Takes 30 mins preparation time
1 hour 30 mins cooking time
Serves 4
Ingredients:
2 tablespoons olive oil
30 g (1 oz) butter
1.5 kg (3 lb) chicken pieces
1 orange
1 red onion, thinly sliced
2 cloves garlic, chopped
cup (185 ml/6 fl oz) chicken stock
cup (125 ml/4 fl oz) white wine
1 tablespoon plain flour
1 red capsicum, quartered
12 stuffed green olives
cup (15 g/ oz) chopped fresh parsley
Instructions:
1. Preheat oven to moderate 180C (350F). Heat the oil and butter in a large pan. Brown the chicken in batches over high heat and transfer to a flameproof casserole dish.
2. Cut two large strips of rind from the orange and set aside. Remove the pith from the orange, then slice the orange into thin rounds. Set aside.
3. Cook the onion and garlic in the pan for 3 minutes over medium heat, or until softened. Combine the stock and wine. Stir the flour into the pan, then slowly add the stock and wine and stir until the mixture comes to the boil. Add the orange rind strips, then pour over the chicken. Cover and bake for 1 hour.
4. Meanwhile, grill the capsicum, skin-side up, for 8 minutes, or until black and blistered. Place in a plastic bag, seal and allow to cool. Peel away the skin and cut the flesh into strips.
5. Remove the chicken from the dish; cover and keep warm. Bring the sauce to the boil on the stove top, skimming off the fat. Boil for 5 minutes to thicken slightly. Add the capsicum strips, orange slices, olives and parsley. To serve, remove the orange rind, season to taste and spoon the sauce over the chicken.
