i mean really, the only benefit of a school email is it shows where you go/went to school
which is what the education bit in your resume would do anyway

Depending on how long you plan to be using that email and what job, sometimes it might just be safer to use an externally hosted email. e.g. uni email addresses no longer work once you graduate.

I personally set up a gmail dedicated to work-related things e.g. applications, signing up to fill in the forms, resume, etc

Except mine's reverse, I set up an email dedicated to spam and just POP3-ed back into my original. I'll delete it in a few years.

Guess that works too. I just wanted my name@gmail.com so that worked. If I were to do it again I'd use my domain name
