Can your question be more specific as to what structure you actually meant? as I think all timetables have pretty much the same structures. But I will try answering your question as to how I understood it.
You choose your timetable usually 1 day after the results are posted but as you are new student, you have to attend the orientation day and enrol+register your class there (which is like 1week after everyone else has registered).
Unlike uni where you actually enrol and then register for classes a few days later, enrolment+class registrations in sibt opens at the same time. You might be a bit disadvantaged this semester as new students always get bad timetables as good ones have been chosen by enrolled students.
When you register your class in sibt, first you need to choose what units you are going to do and then you choose "a class (might be based on the class' time in your case)". When choosing the class, you can see the tutor and lecturers' name for the particular subjects at the particular time (also shows you the classroom number). If you have friends who have done the units before, it might be a good thing to ask them to recommend you as to which tutors and lecturers are the best in the particular units.
So when you print your timetable, you would be able to see your classes (in table with each row showing the time and column showing the day), tutors and lecturers' name, and the room number.
I do remember I did have a couple of classes until 9pm but most other classes were empty which means not all subjects were actually having night classes. So it's true that their latest class is 5-9 but not for all subjects. And I think some subjects that have practical classes will not have class after 5pm as all comp. labs are closed around that time I think. (eg. stat170 and isys123 which are core units for commerce students)
Note: These answers are based one my experience in sibt around 2 years ago and I don't know how different it is now compared to then.
