Can you guys please give me some advise with regards to what subjects to do in year 12.

English? English Ext. 1? English Ext. 2?

I'd say at least extension 1 English, if not extension 2. And do something that reflects the area of journalism you're interested in for the EE2 major, because you can then use it as part of a portfolio, if you need it. Other than that, it's really mostly down to what you're interested in - if you want to be a journalist specialising in concert reviews, then doing music would be good, and if you wanted to be a sports writer PE would probably be useful (to some degree). And the sorts of subjects where you have to do essays wouldn't hurt, because you'll get lots of practice at writing.
Have a look at information from unis, and see what the general pre-reqs/recommended knowledge is. Even if it only tells you what level of English you need, you'll still be able to make sure you're going to fulfill the requirements to get into the course.

I would say EE2 would be an important part of your HSC if you did journalism. I was talking to our careers advisor at school and they recommend Economics if you want to journalism because it makes you more employable if you understand economic policy with governments and taxes and stuff like that.

But if you don't do it then I can't see a problem, I'm just telling you what my teacher told me

Do what you enjoy while making sure you get a good dose of the humanities.
Modern History is educational in teaching you about how the world works.
Society and Culture might be useful but some say it is stupid.
English adv ext 1 and 2 preferably.
Maybe drama. Maybe legal studies. Maybe economics.
But, as the other girl says, it really depends on what you want to write about.
Philosophy or psychology might be good if your school offers it.
Maths is probably unecessary.

Yeah cause HSC economics teaches you so much about how economic policy works

EE1 and maybe EE@ (although EE2 isnt completely necessary) and maybe even a history subject. History or HE1 would be a great way for you to determine reliability of sources, how evidence impacts upon the finished story, how to research effectively etc
