Anyone know how to study for year 12 phys in terms of learning the content? I was going to just read over the textbook and take notes along the way but I was wondering if anyone had any better strategies?

Textbook is sufficient. Make sure after each syllabus dot point, you're attempting exam style questions just to solidify your understanding.

Do you have any recommendations for specific phys textbooks that are best for content? I'm trying to decide between jacaranda and pearson

I reckon Pearson. Only issue is they go through some out of syllabus content from what I remember.
