Also how do i drop to a single degree if i don't like either the science or business aspect?

You should be OK. I didn't do any science at all for my HSC, and I'm doing just fine in Advanced Science.

Don't know what it's like at UTS, but at USYD, the Chemistry and Biology units offered are definitely manageable without HSC knowledge (Physics is a bit harder to do but seeing as you're already doing that you should have no problems).
