Say I am an average selective student would the following chosen subjects overwhelm me?

Advanced English
2 Unit Mathematics
Chemistry
Biology
Physics
P.D.H.P.E

I am unsure of the actual amount of work of each, I am not really willing to drop any subjects either.

Should be fine, 12 units is a very do-able load.

Not at all, the only subjects that usually end up overwhelming people are extension subjects - languages, maths, history (limited to yr 12 only) or english etc.
Also, which school are you from? MFHS? xD

Most students should be able to handle that subject mix. If you cant, you can drop in year 12.

that should be alright for year 11... but it might be a bit hard because of tripple sciences :p

It really depends. 3 sciences for me isn't an issue at all. If you are dedicated to your studies and you are organised, no particular combination of subjects should throw you off into a 'i wanna die' mode - that is, unless you dislike your subjects (which in that case i recommend you change them asap early on this/next year).

Just to note I love science and find it incredibly interesting. I always seem to get the highest marks.
