800 words for a non-prepared for essay. writing is not an issue for me, it's formulating an idea.

1000 is a good benchmark - it is definitely possible to get full marks in a 1000 word essay, and it's an achievable length (with practice).
I'd say that anything <800 words would start to lose marks because it just wouldn't be covering enough content.

For english (and most HSC essays) this is pretty much what is required in terms of length. You should always remember that quality comes over quantity, however, if you are writing less than 800 words then the quality of your essay will be reduced due to a lack of detail. To hit you with another saying "sometimes, quantity has a certain quality to it"

If known before hand, I would write approximately 1100 words.

I do about 1300 words in 40 minutes. Of course, it's barely legible though.

I'd say that, if you write on the spot, you really don't need to go past 1000 words since going too far beyond that will, for a lot of people, make the response less coherent and cohesive since you don't think as much.

1350 If I memorise an essay. 1000 if I don't. Here's a tip, take 2 panadol 20min before the exam. You will blitz through it without feeling nearly as much pain ^^
