You can receive a max of 5 from subject bonuses, a max of 10 from EAS, and I think being an Elite Athlete gives you (Unsure of how many points)? Potentially you could receive 15 + (Elite Athlete) bonus points as there is only a max amount of points for each scheme.

From what I know even if you did enrol, you can unenrol later as long as its before the census date. The early offer people at UWS told me that I could enrol without it effecting me in main rounds and I could unenrol later if I wish to accept another offer as long as I unenrol before census...

Check your student email, you get some kind of enrolment receipt email and also that HELP acknowledgement email :)

The only ones I know of are the UWS early round offers (Based on ATAR category day after ATAR is released) and UOW which is based on Yr 11 and current Yr 12 results and also statements of support, equity and relevant work experience. It is not based on ATAR as you get your offer before or near...
