Your best chance is to put B Commerce as your first preference (as no one knows what the cutoffs will be next year). Second preference should be B Economics and then third pref should be B Arts (also, it's Arts not Art).
Whether it's "easier" doing Arts or Econ first year...well, it's easier...
If you select B Com (International), I think that gives you the 1 year mandatory overseas exchange program.
A normal B Com won't give you international experience, but you can always apply for exchange programs down the track

At EY, salaries are reviewed yearly (and performance is reviewed bi-annually) - this means that at all levels from Grad to Senior Manager, salary increases (and promotions) are linked to performance. I'm sure this is roughly the same at all Big4.
