Did people find it to be similar "hardness" to other HSC past exams? Or easier than your trial exam?

How did people find it compared to trials?

Time would probably be better spent practising questions. Maybe note down formulae in a separate book.

Can you block their number and stuff so they can't contact you during the HSC period?

I mean the external HSC exam contributes to 50% of your ATAR so it is certainly possible.

Nah you'll be fine mate. You won't get zero.

Some people in multiple choice exams will also be able to tell you which answer they put so prepare to be amazed! ;)
